A fool-proof recipe! Crisp on the outside and fluffy on the inside, roasted potatoes are a simple, easy side dish that goes with pretty much any meal! From roast chicken to a great steak! Feel free to get creative with seasonings: Add your favorite seasonings based on what’s in your spice cupboard or what herbs are growing in your garden!

  • Feel free to adapt the amount of garlic used in this recipe.
  • If you don’t like parsley, you can use fresh chopped rosemary or thyme. Dried herbs would work just as well but go easy because they can overpower the flavor of the potatoes.
  • Roasting potatoes in a hot, preheated oven set at a high heat gives you the best, crispy results with melt-in-your-mouth fluffy interiors.

How to roast potatoes

Making oven-roasted potatoes tossed with Parmesan is so incredibly simple that it’s our go-to side dish!

  • The first step to making great oven-roasted potatoes is choosing the right potato variety. Use baby red potatoes or mix with small Yukon golds. German butterballs or fingerling potatoes would also be a good choice.
  • Next, preheat the oven to a very hot temperature – 400º F (200°C).
  • Wash potatoes and chop your potatoes into similar-sized pieces – we like them quartered or halved if the baby potatoes are already small. This step is crucial to ensure even cooking.
  • Parboil potatoes in boiling water for 5 to 8 minutes to precook them. They’ll be more tender on the inside when roasting.
  • To guarantee an even distribution of flavor, mix the seasoning together with butter and freshly grated parmesan before tossing in your potatoes. Toss the potatoes in the parmesan mixture evenly.
  • Transfer the potatoes to a sheet pan and spread them out into 1 layer. Roast in the oven for 40 minutes to 1 hour or until browned and crisp. Flip once or twice with a spatula during cooking in order to ensure even browning.

As we said earlier, roast potatoes at least 400°F (200°C) for the best, golden results. Depending on how busy you are in the kitchen, you can cook potatoes at a lower temperature if necessary – but you may need a longer roasting time. This leads us to…

For crispy roast potatoes on the outside, roast them at a higher temperature for the best, golden results: normally at 400°F (200°C) for 40 minutes to 1 hour, while turning them a couple of times to ensure they crisp up all over. Garlic and parmesan will stick to the potato flesh and give that crisp golden crust. If you need more time, roast at 350ºF (180ºC) for 1 hour to 1:20 hour.

How To Roast Potatoes withGarlic Butter Parmesan

1.Preheat your oven to 400ºF (200°C) and place a rack at the bottom.

2. Wash the potatoes and then slice them in quarter

3. Grease a large baking sheet with non-stick spray or olive oil and set aside.

4. Parboil baby red potatoes in boiling water for 5 to 8 minutes to precook them. The potatoes will be more tender on the inside when roasting.

5. In a large bowl, combine 1/4 cup of olive oil, garlic, salt, herbs, pepper, and parmesan cheese, mixing to combine. Add a little more olive oil if the parmesan cheese has absorbed most of it.

6. Toss parboiled potatoes through the garlic parmesan mixture to evenly coat.

7. Arrange the potatoes on the prepared baking sheet, cut side down, and in a single layer.

8. Roast the potatoesfor 25 minutes, turning after 15 minutes with tongs or a spatula, until potatoes are browned and crisped at the edges.

9. In the meantime, gently melt butter in the microwave and combine with fresh chopped parsley. Remove the roasted potatoes from the oven, and drizzle with the butter parsley sauce. Add bacon bits, and toss to coat well.

10. Serve your roastedpotatoes with garlic butter and parmesanimmediately. Enjoy! ❤️

Roasted potatoes tips

  • For extra golden potatoes, youcan broil the potatoes for 2-4 minutes after roasting.
  • Parboiling potatoes is optional, if you want to skip this step, just roast potatoes for 35 – 40 minutes.
  • Allow the potatoes to cool down for a couple of minutes on the bakingsheet before removing them. This will ensure parmesan sticks to the potatoes, not on the baking sheet surface.
  • The best part is when you pour the melted butter with parsley over the roasted potatoes. Do not skimp on this!

    These potatoes are out of this world good. We had no leftovers!! Thank you for a terrific recipe. I like to make things ahead so I can enjoy time with friends when they come over---I did cut the potatoes ahead and place in a ziplock bag & coated with olive oil, fresh garlic & seasonings/some parsley & put in the fridge for a few hours prior to roasting-- I added the parmesan right before baking-- I've made this without the parmesan and was still wonderful. It worked wonderfully to prep ahead, I just squeezed as much air from the bag as possible. Yummmmy recipe. Thank you for sharing it.

    Potatoes turned out great. Husband and I both loved them. Only problem I had was they were still hot from parboiling when I tossed with Parmesan mixture. Parmesan was melting into a disintegrated mess. Ended up tasting great but they probably are better when they are tossed correctly with the Parmesan. I don’t know how others have done it, it seems like it should be an easy fix. Where did I go wrong?

    To those who love the crispness, It's important to note that the main way you achieve this from tossing is actually to like, really, really toss them thoroughly. The recipe/article doesn't bother to mention this but while yes, you're tossing to coat Iin Ingredients, but it also breaks down the starch, which eventually turns into somewhat of a liquid/paste (you want that) that should coat all the potatoes. THAT is actually what will fry and turn the outside of the potatoes crispy when cooked.
