Before you run to the grocery store to buy some bread rolls, I have the perfect recipe for you. Enjoy the buttery flavor and soft texture of my family favorite recipe for quick dinner rolls.

  • Milk and Water: Whole milk produces homemade dinner rolls with the best texture and flavor. Low fat milk as well as plant-based milk can be used as well although the rolls won’t be as soft as when using whole milk.
  • Yeast: This recipe uses active dry yeast. Remember that yeast is perishable and after the package has been opened it requires refrigeration to stay alive. Refrigerated in an airtight container, yeast will last for 4 moths and 6 months if it’s in the freezer. Instant yeast can be used as well.
  • Honey: Honey adds flavor and a hint of sweetness to the bread. Honey feeds the yeast but, make sure to use honey without any additives as some additive can kill the yeast.
  • Salt: i prefer using seas salt but other types of salt work too. Salt balances the sweetness in the dough.
  • Flour: I use all-purpose flour to make these one-hour dinner rolls.
  • Butter: Bread dough made with very little or no butter, produces chewy and crusty bread. Butter guarantees flavorful and soft dinner rolls. I mostly use unsalted butter for all my baking, but for this quick roll recipe, both unsalted or salted butter can be used.

  1. Combine Wet Ingredients: Stir together the water, butter, milk and honey. Heat the mixture until it reaches 110 degrees Fahrenheit (this temperature feels like a warm bath).
  2. Proofing the Yeast: Pour the warm liquid mixture into the bowl of a stand mixer fitted with the dough hook attachment. Sprinkle the yeast over the warm liquid and let it sit for about 5 minutes (this is how you proof the yeast).
  3. Make the Dough: Add 3 1/2 cups of the flour and the salt and mix at low speed gradually increasing the speed and mixing until combined. If the dough sticks to the sides of the bowl, slowly add additional flour until the dough no longer sticks. Don’t add too much flour. It’s best to add a little bit at a time.
  4. Cover the Dough and Let It Rise: Form the dough into a ball and place it in a lightly greased bowl. Cover the bowl with a clean towel or plastic wrap and let the dough rise in a warm place for 15 minutes.
  5. Prep: Preheat the oven and grease a baking dish. You can use melted butter or cooking spray.
  6. Shape: Drop the dough onto a lightly floured surface and punch it down. Divide the dough into 15 equal pieces and form into dough balls.
  7. Rise: Cover and allow to rise once again.

Yes! This easy dinner rolls recipe is made in one hour total. The recipe allows 15 minutes to make the dough (that includes proofing the yeast), 15 minutes for the first rise, 15 minutes for the second rise and 15 minutes of baking time!

What If I Don’t Have a Stand Mixer?

Although using a mixer to make this one-hour dinner rolls recipe makes mixing the dough a bit easier, this recipe can be made by hand also.

Combine the wet ingredients and dry ingredients in a large bowl. It doesn’t have to be perfectly combined and smooth. Drop the dough onto a lightly floured surface and knead by hand for 5 to 7 minutes or until smooth. If the dough is too sticky, gradually add additional flour (about 1/4 cup at a time).

After you shape the rolls, place them in the greased baking pan, cover them and refrigerate for up to 48 hours. Before baking, allow the rolls to sit at room temperature for 2 hours.

Can You Freeze Dinner Rolls?

Yes! These dinner rolls can be frozen before they are baked. After you shape the rolls, place them on a greased baking sheet or baking dish and then, freeze them. Once the rolls are frozen, place them in a resealable freezer bag. When ready to bake, let them thaw and rise for about 4 hours, then bake.

You can freeze baked dinner rolls for about 3 months.

How to Properly Store Dinner Rolls?

Ingredients

  • 1 cup water
  • 2 tablespoons butter melted
  • 1/2 cup milk
  • 2 tablespoons honey
  • 1 tablespoon active-dry yeast
  • 3 1/2 to 4 cups all-purpose flour
  • 1 teaspoon fine sea salt
  • Additional melted butter for greasing the bowl and brushing the dinner rolls

Optional: Herb Garlic Butter

  • 3 tablespoons butter
  • 1 garlic clove grated
  • Pinch of salt
  • 1 tablespoon finely chopped parsley

Instructions

  • Stir the water, butter, milk and honey together in a small saucepan or in a microwave safe bowl or measuring cup. Heat the mixture until it reaches 110 degrees Fahrenheit (this temperature feels like a warm bath).Give the mixture a quick stir to make sure the butter is completely melted and the honey has dissolved. NOTE: If using the microwave, heat up the mixture in small intervals stirring in between each interval to make sure it heats up evenly.

  • Pour the warm liquid mixture into the bowl of an electric mixer fitted with a dough hook attachment. NOTE: To keep the mixture from dropping below the 110 degrees temperature, I warm up the mixer’s bowl, by placing it under running hot tap water for a minute or so. I usually only get the outside of the bowl wet. Sprinkle the yeast over the warm liquid and stir. Allow the mixture to sit for 5 minutes. During this time the yeast will activate and get foamy.

  • Add only 3 1/2 cups of the flour and salt. Mix on low speed and gradually increase to medium-low speed until combined.

  • If the dough sticks to the sides of the bowl, slowly add just enough of the remaining flour so the dough doesn’t stick. Add the flour a tablespoon at a time, you can always add more if needed however, you can’t take it out if you add too much. Continue mixing for about 4-5 minutes until the dough is smooth and elastic. The dough should be lightly sticky but manageable.

  • With your hands, form the dough into a ball. Grease a bowl lightly with melted butter, put the dough in the bowl, then turn it over so the top is lightly buttered. Cover the bowl with a damp towel and allow it to rise for 15 minutes.

  • Heat the oven to 400 degrees Fahrenheit and grease a9 x 13-inch baking dishwith melted butter or cooking spray, set aside.

  • Drop the dough onto a lightly floured surface, punch down the dough and shape it into an even level rectangle (or any shape you want). Cut the dough into 15 equal portions (you don’t need to be exact). Form each piece into a ball and place them in the prepared baking dish. Cover and allow it to rise for 15 to 20 minutes in a warm area in your kitchen.

  • Bake uncover for 15 minutes or until the tops are golden brown and the rolls are cooked through. Remove from the oven and brush with melted butter (or with garlic herb butter). Serve warm.

Optional: Garlic Butter

  • Make the garlic herb butter by combining the butter and garlic in a small sauce pan or microwave safe bowl. Melt the butter over low heat or in the microwave in small intervals. When the butter is completely melted and fragrant, add the pinch of salt and stir in the chopped parsley. Brush the garlic-herb butter on the hot dinner rolls before serving.
